The Test Pilot Cocktail (which launched a host of imitators like the Jet Pilot, Ace Pilot, Space Pilot, and Astronaut) was invented by Tiki innovator Donn Beach. We say more about the history in the Notes.

The Paddy Cocktail
This Prohibition-era classic is an Irish whiskey Manhattan
OK, we’re not wild about the name of this drink. Back in the day, “paddy” was pretty much an ethnic slur against Irish immigrants. Fortunately, these days the insult has lost most of its sting.
That is the name of the cocktail, though, and has been since the drink was invented (probably in the 1920s). And since the drink tastes really good, we’ll just have to live with it.
Because once you taste this, you won’t want to live without it.

The Martinez Cocktail
The Mother of all Martinis?
The Martini is the most iconic of cocktails. But it hasn’t always been the crisp, almost austere drink we know today.
Back in the 19th century, when the drink was growing up, it was much sweeter. And it probably was made with sweet vermouth (the red stuff). Which just happens to be a key component of the Martinez Cocktail – from which the Martini may have developed.
The Martinez has an old-fashioned vermouth-forward flavor that fits well with today’s craft cocktail scene. Although definitely sweeter than a Martini, it’s not cloying, so it works as a pre-dinner drink.
So mix up a true ancestral tipple. And tell your dinner party guests that you’re researching cocktail genealogy.

The Suffering Bastard Cocktail
AKA The Suffering Bar Steward, this slow sipper was concocted as a hangover remedy
OK, the name is a bit . . . unusual. But don’t let that put you off. Because the Suffering Bastard happens to be an exceptionally refreshing drink. Which makes sense, given its origin as a hair-of-the-dog remedy.
It’s a wonderful cocktail for a lazy afternoon by the pool or on the beach. And because it’s a fairly voluminous tipple, you’ll take a while to get through one. So you won’t be drinking too many of these.
Good thing. Because you don’t want to wind up with, you know, a hangover.
