Roast Peach Salad

Fresh peaches are one of the glories of summer. But sometimes the peaches we find at the market are less than fully ripe. What to do?

Roast them, we say (grilling works too). It brings out their sweetness and concentrates their flavor.

You don’t need to save them for dessert, either. Their sweet intensity plays well with savory ingredients (we like to use salty ham or prosciutto, plus goat cheese). Mix in some balsamic vinegar and olive oil, and you have a scrumptious salad.

A versatile one, too. This salad is fancy enough to start a summer dinner party. But it’s easy enough to serve as a quick weekday main.

When we think shortcake, we usually picture strawberries.  But shortcakes can friend any fruit.  So with fresh local peaches hitting the stores now in the US, the time is right to use them in one of America’s favorite desserts.

That explains the Peachy part of the title, but what about the Cream?  Well, this recipe is heavy on cream.  In addition to using whipped cream as a topping (natch!), it also features cream-biscuit shortcakes.  For double the flavor, you know. 

But be warned:  This dish is so tasty that once you serve it, all conversation at the table will probably cease — until the plates are licked clean.  The next words you hear will be, “Could I have seconds, please?”

Use Drop Biscuits for a Quick Version of This Classic American Dessert

We’re approaching the end of prime peach season, but there’s still time enough to make another dessert or two using this juicy and naturally sweet fruit.

Although peach pie is terrific, there’s nothing quite so satisfying as warm peach cobbler. It’s also an all-American dessert, likely having “originated in the early British American colonies”. Most colonists didn’t have the ingredients or cooking equipment to replicate traditional British suet puddings, so they made puddings with biscuit dough. “Cobbler” got its name because the rough biscuit surface of the dessert resembles a street constructed of lumpy cobblestones.

These days, few of us make biscuits from scratch. Many people are quite skittish about making them. Too complicated, they say. Something could go wrong.

Well, drop biscuits are extremely easy to make — nothing can go wrong. And in my opinion, they work even better in cobbler than the traditional rolled version.

Best of all, they’re quick to make.
